The Taos Food Co-op now has the first tortilleria in town to offer traditional New Mexican nixtamalized corn products made with local, organic blue corn. We source our corn regionally, process it traditionally, and stone-grind it ourselves to provide the freshest masa-based foods available in Taos.

What is Nixtamalization?
An ancient Mesoamerican technique used to process corn for improved flavor, texture, and digestibility. Whole kernel corn is boiled with mineral lime (cal) and steeped in the alkaline solution overnight.
This process breaks down the hull (pericarp) of the corn kernel into digestible starches and dramatically increases the bioavailability of the corn’s vitamins and nutrients. The soaked corn is then ground into a fresh dough, or masa, which serves as the base for our tamales, tortillas, and atole.
